Tuna Niçoise Salad
Serves 2
Ingredients:

2 tuna steaks
-
4 new potatoes – sliced lengthways into 4 pieces

2 plum tomatoes - chopped
-
60g french beans
-
2 little gem lettuce hearts – sliced lengthways into 4 pieces

½ red onion - finely sliced
-
2 hard-boiled eggs – cut into halves
-
8 pitted black olives
-
4 basil leaves
For the Dressing:
-
7½ tbsp extra virgin olive oil
-
1½ tbsp red wine vinegar
-
1 tbsp chopped parsley
-
1 tbsp fresh chives
-
1 garlic clove
-
½ tsp of salt
-
½ tsp of black pepper
Cooking Method:

To make the dressing, mix red wine vinegar, olive oil, parsley, chives, garlic, salt, and pepper together

Place tuna in a shallow dish and pour over half of the dressing, and leave to marinate for approx. 90 minutes, tossing the marinade from time to time

Cook tuna steaks on a griddle pan for approx. 2 - 3 minutes on each side, and once removed cut into slices
-
Lay lettuce leaves onto a large plate and add the onion, tomatoes, potatoes, and beans, along with tuna slices

Add eggs, olives, and basil leaves, and drizzle over the remaining dressing
