Tuna Niçoise Salad

Serves 2

Ingredients:

  • 2 tuna steaks

  • 4 new potatoes – sliced lengthways into 4 pieces

  • 2 plum tomatoes - chopped

  • 60g french beans

  • 2 little gem lettuce hearts – sliced lengthways into 4 pieces

  • ½ red onion - finely sliced

  • 2 hard-boiled eggs – cut into halves

  • 8 pitted black olives

  • 4 basil leaves

For the Dressing:

  • 7½ tbsp extra virgin olive oil

  • 1½ tbsp red wine vinegar

  • 1 tbsp chopped parsley

  • 1 tbsp fresh chives

  • 1 garlic clove

  • ½ tsp of salt

  • ½ tsp of black pepper

Cooking Method:

  1. To make the dressing, mix red wine vinegar, olive oil, parsley, chives, garlic, salt, and pepper together

  2. Place tuna in a shallow dish and pour over half of the dressing, and leave to marinate for approx. 90 minutes, tossing the marinade from time to time

  3. Cook tuna steaks on a griddle pan for approx. 2 - 3 minutes on each side, and once removed cut into slices

  4. Lay lettuce leaves onto a large plate and add the onion, tomatoes, potatoes, and beans, along with tuna slices

  5. Add eggs, olives, and basil leaves, and drizzle over the remaining dressing
