Fresh fish delivered straight to your door
Skate Wing in Tomato Sauce
Serves 4
Ingredients:

4 skate wings
-
400g chopped tinned tomatoes

50g stuffed green olives

10 ml olive oil
-
1 finely chopped onion (small)

2 fresh thyme sprigs
-
Grated rind ½ an orange
-
1½ tsp caster sugar

Plain flour to be used for coating

Salt
-
Ground black pepper

Cooking Method:

Heat the oil in a pan; add the onion and cook on low heat for 10 minutes

Stir in thyme and orange rind, and cook for 1 further minute

Stir in tomatoes, olives, sugar, salt, and pepper and heat without reaching boiling point

Put mixture into a pot and cover with the lid, and cook for 1½ hours

During this time, rinse skate under cold water and pat dry with kitchen paper

Sprinkle flour onto a flat surface and season with salt and pepper

Coat each wing in flour, shaking off the excess, then removing the lid, place them on top of the tomato sauce
-
Put the lid back in place and reduce the temperate to low
-
Cook until skate is cooked, or when it flakes easily

Place fish onto a warm plate and spoon the sauce over it
