Skate Wing in Tomato Sauce

Serves 4

Ingredients:

  • 4 skate wings

  • 400g chopped tinned tomatoes

  • 50g stuffed green olives

  • 10 ml olive oil

  • 1 finely chopped onion (small)

  • 2 fresh thyme sprigs

  • Grated rind ½ an orange

  • 1½ tsp caster sugar

  • Plain flour to be used for coating

  • Salt

  • Ground black pepper

Cooking Method:

  1. Heat the oil in a pan; add the onion and cook on low heat for 10 minutes

  2. Stir in thyme and orange rind, and cook for 1 further minute

  3. Stir in tomatoes, olives, sugar, salt, and pepper and heat without reaching boiling point

  4. Put mixture into a pot and cover with the lid, and cook for 1½ hours

  5. During this time, rinse skate under cold water and pat dry with kitchen paper

  6. Sprinkle flour onto a flat surface and season with salt and pepper

  7. Coat each wing in flour, shaking off the excess, then removing the lid, place them on top of the tomato sauce

  8. Put the lid back in place and reduce the temperate to low

  9. Cook until skate is cooked, or when it flakes easily

  10. Place fish onto a warm plate and spoon the sauce over it
