Salmon Pasta with Parsley Sauce
Serves 2
Ingredients:

450g salmon fillet (skinned)

225g pasta of choice
-
175g cherry tomatoes (halved)

150 ml crème fraiche
-
45 ml finely chopped parsley
-
Finely grated rind ½ an orange
-
Salt
-
Black pepper

Cooking Method:

Cut salmon into bite-sized pieces and then arrange it on a heatproof plate and cover the tin foil
-
Bring a large pan of salted water to boil, add pasta and return to boil
-
Place the plate of salmon on top and simmer for 10 - 12 minutes, until pasta and salmon are cooked

Drain pasta and toss with tomatoes and salmon

Mix together crème fraiche, parsley, orange rind, and pepper to taste

Stir this sauce into the pasta and serve hot or cold
