Mediterranean-Style Baked Ling Fillets
Serves 4
Ingredients:

4 ling fillets (approx. 175g each)

250g cherry tomatoes - halved

50g pitted black olives
-
2 tbsp capers (drained)

Rind and juice of one lemon
-
2 tsp thyme leaves
-
2 tbsp olive oil

Cooking Method:

Preheat the oven to 220°C
-
Combine tomatoes, olives, capers, lemon rind, thyme, and oil in a roasting pan
-
Add salt and pepper
-
Place fish into the pan in a single layer, spooning some tomato mixture over fish
-
Drizzle with lemon juice and bake for approx. 15 minutes
-
Remove from pan, drizzle with more mixture and serve with potatoes and green salad
