Mediterranean-Style Baked Ling Fillets

Serves 4


  • 4 ling fillets (approx. 175g each)

  • 250g cherry tomatoes - halved

  • 50g pitted black olives

  • 2 tbsp capers (drained)

  • Rind and juice of one lemon

  • 2 tsp thyme leaves

  • 2 tbsp olive oil

Cooking Method:

  1. Preheat the oven to 220°C

  2. Combine tomatoes, olives, capers, lemon rind, thyme, and oil in a roasting pan

  3. Add salt and pepper

  4. Place fish into the pan in a single layer, spooning some tomato mixture over fish

  5. Drizzle with lemon juice and bake for approx. 15 minutes

  6. Remove from pan, drizzle with more mixture and serve with potatoes and green salad
