Kippers Florentine
Serves 4
Ingredients:

200g Kippers
-
4 medium eggs
-
50g washed spinach
-
25g butter
-
2 tsp ground cumin

Cooking Method:

Grill kippers for approx. 10 minutes

Cook spinach, cumin, and butter in a large pan over medium heat for 5 minutes turning occasionally, until spinach has wilted
-
Poach eggs by simmering for approx. 3 minutes, then remove with a slotted spoon
-
Strain spinach and spoon it onto plates
-
Place kippers over the spinach, then top with the eggs
