Kippers Florentine

Serves 4


  • 200g Kippers

  • 4 medium eggs

  • 50g washed spinach

  • 25g butter

  • 2 tsp ground cumin

Cooking Method:

  1. Grill kippers for approx. 10 minutes

  2. Cook spinach, cumin, and butter in a large pan over medium heat for 5 minutes turning occasionally, until spinach has wilted

  3. Poach eggs by simmering for approx. 3 minutes, then remove with a slotted spoon

  4. Strain spinach and spoon it onto plates

  5. Place kippers over the spinach, then top with the eggs
