Grilled Plaice with Gherkin & Shallot Mayonnaise

Serves 2


  • 2 plaice fillets

  • 2 large gherkins - rinsed and chopped

  • 1 shallot - finely sliced

  • 125g mayonnaise

  • 3 tbsp plain flour - seasoned with salt and pepper

  • 2 tbsp salted capers

  • 65g butter

  • ½ a lemon

  • Handful of chopped parsley

  • Mixed Vegetables

Cooking Method:

  1. Preheat the oven to 220°C

  2. Put shallots, gherkin, mayonnaise, and a squeeze of lemon into a bowl and mix together

  3. Press each side of the plaice fillets into the seasoned flour, then shake off any excess

  4. Heat 15g of butter in a non-stick frying pan

  5. Add fish skin-side up, and fry for 3 - 4 minutes until golden

  6. Turn over and cook for a further 3 - 4 minutes until cooked and remove

  7. Wipe out the pan and melt the remaining butter

  8. Remove from heat and add the capers and parsley

  9. Season and spoon over the fish

  10. Serve with mixed vegetables
