Garlic & Herb Barbequed Trout

Serves 4


  • 4 trout

  • 1 sliced lemon

  • 40 ml olive oil

  • 40g sliced garlic

  • 10g fresh rosemary

  • 10g basil

  • Salt and pepper to taste

Cooking Method:

  1. Slice down centre of the under-bellies of the fish with a knife

  2. In a bowl combine olive oil, garlic, and herbs and give them a quick stir

  3. Place herb mixture and lemon slices inside the trout and wrap them in tin foil

  4. Place wrapped trout onto a preheated barbecue and cook for roughly 15 minutes

  5. Remove stuffing from inside the trout and using a fork, remove the meat from inside
