Fresh fish delivered straight to your door
Fish Cakes
Serves 2 - 3
Ingredients:

275g salmon or haddock
-
350g mashed potatoes
-
50g flour (seasoned with salt and pepper)

15g butter
-
600 ml milk
-
1 egg (Beaten)
-
1 onion
-
1 tbsp fresh parsley (chopped)
-
Wholemeal breadcrumbs
-
Fresh dill (optional)

Cooking Method:
-
Poach fish in the milk for 5 – 7 minutes

Skin and flake fish, taking care to remove any bones
-
Finely chop onion then fry in the butter until transparent
-
Add fish (which should remain in flakes), mashed potatoes, onion, and chopped parsley together

Shape mixture into cakes
-
Dip cakes into the beaten egg, then the flour, then back into the egg, then coat with the breadcrumbs
-
Grill on low/medium heat for 5 – 7 minutes until brown
-
Garnish with Dill (optional)
