Fish Cakes

Serves 2 - 3

Ingredients:

  • 275g salmon or haddock

  • 350g mashed potatoes

  • 50g flour (seasoned with salt and pepper)

  • 15g butter

  • 600 ml milk

  • 1 egg (Beaten)

  • 1 onion

  • 1 tbsp fresh parsley (chopped)

  • Wholemeal breadcrumbs

  • Fresh dill (optional)

Cooking Method:

  1. Poach fish in the milk for 5 – 7 minutes

  2. Skin and flake fish, taking care to remove any bones

  3. Finely chop onion then fry in the butter until transparent

  4. Add fish (which should remain in flakes), mashed potatoes, onion, and chopped parsley together

  5. Shape mixture into cakes

  6. Dip cakes into the beaten egg, then the flour, then back into the egg, then coat with the breadcrumbs

  7. Grill on low/medium heat for 5 – 7 minutes until brown

  8. Garnish with Dill (optional)
