Cod Curry

Serves 2 - 3

Ingredients:

  • 450g cod fillets

  • 3 tbsp vegetable oil

  • 1 large onion

  • 2 fresh chillies

  • 2½ cm piece cinnamon stick

  • 2 sprigs of fresh coriander

  • 1 bay leaf

  • 1 tsp ginger paste

  • 1 tsp garlic paste

  • 1 tsp chilli powder

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground turmeric

  • 1 tsp salt

  • 140 ml natural yoghurt

  • 140 ml water

Cooking Method:

  1. Heat oil in a frying pan and add the chopped onion; fry until golden brown

  2. Whilst onion is frying, chop the chillies and coriander, and cut cod into 2-inch pieces

  3. Add cinnamon, ginger, garlic, ground spices and bay leaf and fry for 1 minute

  4. Add yoghurt, coriander, chillies and salt and stir together

  5. Add water and simmer for 2 – 3 minutes

  6. Place cod pieces in the pan and stir into the sauce

  7. Cover pan and simmer for 15 – 20 minutes

  8. Serve with basmati rice and flatbread
