Fresh fish delivered straight to your door
Cod Curry
Serves 2 - 3
Ingredients:

450g cod fillets

3 tbsp vegetable oil

1 large onion
-
2 fresh chillies
-
2½ cm piece cinnamon stick
-
2 sprigs of fresh coriander
-
1 bay leaf
-
1 tsp ginger paste
-
1 tsp garlic paste
-
1 tsp chilli powder
-
1 tsp ground cumin
-
1 tsp ground coriander
-
1 tsp ground turmeric
-
1 tsp salt

140 ml natural yoghurt
-
140 ml water

Cooking Method:

Heat oil in a frying pan and add the chopped onion; fry until golden brown

Whilst onion is frying, chop the chillies and coriander, and cut cod into 2-inch pieces

Add cinnamon, ginger, garlic, ground spices and bay leaf and fry for 1 minute

Add yoghurt, coriander, chillies and salt and stir together
-
Add water and simmer for 2 – 3 minutes

Place cod pieces in the pan and stir into the sauce

Cover pan and simmer for 15 – 20 minutes

Serve with basmati rice and flatbread
